Harvesting Jerusalem Artichokes

A couple of weeks ago, Jon went into our garden to face the wilted sun-flower looking stems. This is what he harvested.



The Jerusalem Artichoke, nothing to do with Jerusalem or artichokes, is in fact a tuber and goes by the name of sunroot, sunchoke, or my favourite equally confusing name, earth apple.



But, how to cook them?

Boil them

Jerusalem artichoke Rule Number Two

Pan fry them with mushroom, bacon and chestnuts and pair it with baked whole snapper and you ARE WINNING, my friends.
