Dragon Fruit and Edamame Salad

Dragon Fruit & Edamame Salad

Boil 250gm of edamame in water, rinse, shell

Rinse a bunch of watercress, lettuce, pick the leaves from the stems

Finely slice half a beetroot and one-quarter red cabbage

Cut one avocado and one dragon fruit into quarters

Mix all together in a bowl

Dressing with 1tsp olive oil, 2 tsp lemon juice, black pepper to taste
